Friday...!
Last night my sister Sher was making four desserts for their monthly dinner at the base; for 40 people - the finance section I think. I wish I had some of the banana pudding. But next week - on The Day of our Nutrition Workshop no less - we're having our Thanksgiving dinner at work. All we need to bring is desserts. I'll invite Kathy to stay if she wants to see how well her talks went over. This was probably not the best timing for talks on nutrition - but then again, maybe we'll be a little more aware of the size portions we eat. Maybe.

Sher wanted her recipe for the chicken/broccoli/wild rice soup she made last fall when Paul and I were there after a ballgame. I found it - my little torn piece of paper I'd written it on - just on the second search. It was stuck between two cookbooks. Ruby asked for it and I wrote it in an email for her. Just in case anyone else is interested - and this can be halved! Sher's recipe makes a lot - mine was not a stock pot full, but a mere crock pot:

CHICKEN, BROCCOLI AND WILD RICE SOUP

2 small chopped onions
2 cups shredded carrots (or cut into small pieces)
10 cups water
2 pkgs. Uncle Ben’s Wild Rice (Fast Cook kind)
2 10-oz. pkgs frozen chopped broccoli
4 cups cubed cooked chicken (I cooked 3 chicken breasts and it was plenty for the soup I made – and it was about ½ this recipe.)
1 lb. Velveeta cheese, cubed
2 10-oz cans cream of chicken soup

Sauté onions/carrots in lightly greased Dutch oven 5 minutes.

Add 10 cups water and seasoning packets from rice.

Add broccoli and the cooked chicken.

Bring to boil and stir in rice.

Reduce heat, cover and cook 5 minutes.

Add cheese and cream of chicken soup.

Stir constantly till cheese melts. Sticks easily – be careful. Freezes well.

Makes 20 cups!!

If you put all in crock pot and let it simmer – it doesn’t stick as much and you don’t have to stir as often.

Variation:

You can substitute cubed potatoes – as many as you want – and one or two packages of frozen mixed veggies or 2 cans of Veg-All for the rice and the broccoli. Cook the chicken in 2 cans of chicken broth and save the broth as part of the liquid. Either version is really good.

He's such a poser. I was folding laudry and he always has to be in the middle of anything I'm doing. He knows when I'm making his picture. Such a ham.

Aunt Margaret

I realized this week that Aunt Margaret's birthday is in November, or thought so. I looked in Goobie's Bible and sure enough - I'd missed it by 4 days. It was November 10. I called her this morning and she answered. I told her three or four times who I was and she said, "Pat in Arkansas?" Yes, I told her - I wanted to wish her a happy birthday!! She said JoAnn (her daughter) had taken her out to eat for the occasion. We talked just a minute or two - it's hard for her to hear and I closed my door so I could talk louder. She said JoAnn was coming to the nursing home for Thanksgiving since it is so difficult for her to get in and out of JoAnn's vehicle and to load/unload the wheelchair. JoAnn came in and I said hello to her. She said Aunt M had not been well, but we didn't have time to go into details, but it wasn't really necessary. "You know how it is." Yes.

It was good to talk to Aunt M. She was so good to me and Goobie at a time in our lives when we needed someone to "take us in." I was intimidated by her then - she's always been outspoken and I was as shy as a mouse. I remember one summer at her house I said I wish I had a tan like hers (this was about 45 years ago - she was always brown as a berry and very striking with her black hair - the Indian heritage was evident) and she said I could have one if I'd turn that TV off and go out in the sun! So true... In my more mature years I remind myself a lot of her! But she taught me a lot and made sure I was in church during that time. This was her 85th birthday.
