Pink Velvet Cake
I did follow the picture by picture directions and recipe in The Pioneer Woman's cookbook. I didn't read it first. One-fourth of the amount of red food coloring does not make a red velvet cake. It's pink. The little tiny bottles in the box of food coloring have 1/4 ounce each and I didn't realize that until I opened the little tiny bottle of red. My "cast of characters" ran all over the counter top as I have only a little corner by the stove that is work space. It was a wreck. But the cake baked and is cooling. The cream cheese frosting is made and waiting for the cake to cool. I hope the folks at work tomorrow don't notice how pale it is. At least it isn't out of a box. Which is okay, but the last thing I took was a mix, and I said for this potluck, why, I'll just make it from scratch! (Tip: if you use an oblong pan, it takes a little longer to cook than if baked in round pans.)
